Banana Bread with Cranberries, Maple Syrup and Coconut |
Cranberry Maple Banana Bread
Makes 1 loaf
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
1/3 cup maple syrup
1 3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/3 cup unsweetened medium coconut
1 1/2 cups cup cranberries
2 cups mashed very ripe bananas (about 4 bananas)
Directions:
Prepare a loaf pan.
Preheat oven to 350 degrees F.
In a bowl, beat butter and sugar for about 5 minutes. Add vanilla, eggs, maple syrup and continue to beat well.
In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and coconut. Add the dry ingredients to the wet mixture and stir in the cranberries and the mashed bananas. Spoon into the loaf pan and bake 55 to 60 minutes until a tester comes out clean.

Growing up, my son had food intolerances to dairy. As someone who liked to bake, I had to get creative with the type of fat I used (no butter) and liquid (no dairy) in my baking.
Eliminating butter was easy, because I would use vegetable oil. To replace the dairy, I often used orange juice or, believe it or not, soda water (it was great in pancakes and waffles).
After staying away from dairy for a dozen years or so, he outgrew his food intolerance and today regularly enjoys ice cream and buttering his toast.
Nevertheless, I still have some great dairy-free recipes, and this is one of them.

I found this recipe at a fruit stand close to our home, which was promoting zucchinis. I’m so glad I picked it up…it’s yummy.

This pumpkin loaf is unassuming, not too sweet, and subtly delicious. The recipe calls for butter, which makes it luscious. However, if you wish a lower fat version, I’ve substituted oil for butter, and been happy with the results.
It is great for breakfast or with your afternoon tea.

You may wonder what buttermilk is exactly. Well, back in the day, buttermilk was the liquid left over after butter was churned. Today, special bacteria are added to the milk, thickening it slightly and giving it that tangy tinge.
But if you’re in a pinch and don’t have buttermilk, then here’s a little baking secret. Add 1 tablespoon of lemon juice to 1 cup of milk and let it rest for 5-10 minutes. Bingo! Homemade buttermilk to use in place of store bought.
