There were an abundance of blueberries available where I live this summer, which inspired me to bake some delicious blueberry muffins. 

I usually use buttermilk in my baking recipes, and then a reader on Pinterest wrote to say she’d modified one of my recipes with sour cream. I decided to give it a try and it worked like a charm. Hence, these muffins are made with sour cream.

I’m a collector (some would say hoarder) of cookbooks and cooking magazines. So, while stranded at home with pulled muscles, I piled them up and spent time perusing new and interesting recipes to make. It’s a fun way to get back into the swing of cooking on a regular basis especially if you’re stuck in a cooking rut.

I love to bake, and since it was blueberry season, I decided to made a few recipes with blueberries. I made this lemon blueberry pound cake recipe a few times and loved it every time.

When anyone comes to my house for dinner, they will almost always be served a fruit crumble or cobbler. I find them easy to make, and somewhat healthy because they’re loaded with fruit. Not to mention, they are really tasty! 

This cobbler uses apples, which is always nice in a dessert. The type of apple you use makes a difference because some are crunchier than others. The super crunchy apples don’t soften as well and the super soft apples, like macintosh and red delicious, will turn your cobbler to mush. My first choice for cobbler is a Spartan apple, but any other medium hard apple will do.

I always have black bananas hanging around the kitchen counter. Too many actually. I often freeze them which means I have black bananas everywhere! Eventually I deal with the problem and bake them...I'm sure this sounds familiar.

This recipe calls for buttermilk. If you don't have any buttermilk don't worry you can still make the muffins. What you do is add 1 tablespoon of freshly squeezed lemon juice into the milk before you start the recipe. When it's time to add the wet ingredients into the dry the milk will be a perfect buttermilk substitute.

A blueberry as a superhero?

You may not believe it, but these little berries come loaded with lots of goodness.

They are chock-a-block full of antioxidants, the substance found in food that helps neutralize the cellular damage caused by free radicals. Now, if that doesn't sound virtuous what does?

There are many other reasons why blueberries are considered heroic. They are high in vitamin C, contain fibre, help reduce urinary tract infections, and may help control cholesterol problems.

Plus, (and this is the one I like the best) they may help slow down age-related mental loss. Yes! Bring on the blueberries!

Now is the time to join the blueberry cape crusader. It is time to start eating, cooking and enjoying blueberries.
