Apple and Mixed Fruit Cobbler

When anyone comes to my house for dinner, they will almost always be served a fruit crumble or cobbler. I find them easy to make, and somewhat healthy because they’re loaded with fruit. Not to mention, they are really tasty! 

This cobbler uses apples, which is always nice in a dessert. The type of apple you use makes a difference because some are crunchier than others. The super crunchy apples don’t soften as well and the super soft apples, like macintosh and red delicious, will turn your cobbler to mush. My first choice for cobbler is a Spartan apple, but any other medium hard apple will do.

Apple and Mixed Fruit Cobbler

Serves 6

5 apples, peeled, cored and sliced thin 
3 cups mixed frozen fruit (blueberries, raspberries, strawberries…any fruit will do)
2 tablespoons fresh squeezed orange juice (from 1 medium-sized orange)
1/4 cup sugar
1/2 teaspoon cinnamon
1 cup flour
1/3 cup sugar
1 1/2 teaspoons baking powder 
1/4 teaspoon salt
4 tablespoons cold butter
1/3 cup 1% or 2% milk
1 teaspoon zested orange peel

Directions: 

Preheat oven to 350 degrees F.

In a 9x13-inch pan combine the apples, mixed fruit, orange juice, 1/4cup sugar and cinnamon. Toss and set aside. In a bowl, combine flour, sugar, baking powder and salt. Add butter and rub into mixture with fingers until fine. Stir in the milk and orange peel.

Drop topping by dollops onto the apple mixture. Bake 40 minutes or until a cake tester comes out clean.

Serve as is, or with whipped cream or ice cream.
