| Cheese Biscuits |
These are easy to make, freeze well and are perfect to serve with soup on a cold, snowy or rainy day. I suggest using aged cheddar cheese for more flavour.

Cheddar Cheese Biscuits
Makes about 12 biscuits (depending on the size)
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon sea salt
1 tablespoon granulated sugar
1/2 cup cold butter, cut into cubes
113 grams (abut 1 cup) shredded aged cheddar cheese
1 cup cold milk
2 teaspoons baking powder

Directions:
Line a baking sheet with parchment paper and preheat oven to 350 degrees F.
In a bowl, mix flour, baking powder, baking soda, salt and sugar.
Add the butter and rub it into the flour mixture with your fingertips until you get small pea-sized pieces. Stir in cheese. Stir in milk and mix ingredients until starts to pull away from the sides of the bowl. Dough will be sticky.
To make biscuits, pull off enough dough to shape into a small biscuit. Place on the parchment paper. Continue until you have about 12 biscuits.
Bake for 14 to 16 minutes until cooked, and bottoms are lightly brown.
