Eating soup and nibbling sweets are a perfect way to endure the hectic,cold days of December…right?

To me, soup season means accepting that winter is firmly in place, and it’s time to settle in and wait it out. Slurping soup when it’s cold, snowy, or rainy is comforting and helps endure the unavoidable short days and long, dark nights.

Soup warms our souls, and keeps us hydrated and healthy. Many soups are filled with veggies, and often made with beans or meat, making them hearty enough to serve as one-pot meals.

Italian Soup with Italian Sausage, Green Lentils and Spinach

This is a delicious soup that is definitely filling enough to be served for a dinner. It's filled with veggies, lentils, and sausages. I like to buy sausages from a butcher, and used hot Italian sausages in this recipe, but medium or mild would do as well. Serve with grated Parmesan cheese on top for an extra bit of yum!

Serves 4

2 tablespoons olive oil
1 medium onion, chopped
2-3 links of Italian pork sausage (about 240 grams), casings removed
1 clove garlic, minced
3 carrots, peeled and diced
1 celery stalk, diced
6 litres of chicken stock, water - or a combination of both
1 - 14 oz can diced tomatoes
1/2 cup dry green lentils, rinsed
5 cups packed fresh spinach leaves
Salt and pepper, to taste
Grated Parmesan cheese

Directions:

În a large Dutch oven, heat olive oil over medium heat. Add chopped onions and sauté, about five minutes. Add sausage and garlic and turn up the heat to medium-high and sauté about four more minutes. Add celery and carrots and cook about four more minutes until sausage is cooked and veggies are beginning to soften. Add chicken stock, tomatoes and lentils. 

Bring to a boil, then lower temperature and cook uncovered 40 minutes until lentils are soft, stirring occasionally. 

Stir in spinach and stir until spinach is wilted.

Season with salt and pepper to taste and serve, passing grated Parmesan cheese to spoon on top.
