Easy and Delicious Homemade Chicken Noodle Soup Recipe |
Here’s a chicken noodle soup recipe that will warm your soul.
For this recipe, I bought a pound (453g) of deboned chicken breasts, cut it into small pieces, and stir-fried it ahead of time.
If you like a little heat, add a pinch of red pepper flakes into the recipe.
Chicken Noodle Soup
Serves 4
1 small onion, diced small
1 clove garlic, minced
2 medium carrots (or 1 large carrot) peeled and diced
2 stalks medium celery stalks, diced
4 cups chicken broth
2 cups water
1 bay leaf
1/2 teaspoon dried thyme
2 cups dry egg noodles
Pinch red pepper flakes (optional)
1 pound cooked chicken diced small
Salt and pepper, to taste
Directions:
Heat oil in a large Dutch oven over medium heat. Add onions and garlic, and sauté two minutes, then add carrots, and celery. Sauté vegetables until soft, about 5 more minutes.
Add broth, water, bay leaf, and thyme.
Reduce heat and simmer 20 minutes.
Add noodles and diced chicken and simmer until noodles are cooked, about 8-10 minutes. Season with salt and pepper (and red pepper flakes if using) and serve.
