Dairy-Free Gingerbread Spice Muffins with Apples, Raisins and Walnuts

Here's a yummy gingerbread spice muffin with apples, raisins and walnuts! I think you’ll find the gingerbread spice in these dairy-free muffins a real delight. The muffins calls for Thompson raisins, but you could substitute Sultanas or even dried cranberries if you wish.
 

Gingerbread Spice Muffins with Apples, Raisins and Walnuts 

Makes 12 
 
2 cups all-purpose flour
1/3 cup granulated sugar
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon all-spice
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 apple, peeled, cored and diced small
1 cup Thompson raisins
1/2 cup walnuts, chopped
1 cup apple juice
1/3 cup canola oil
1/4 cup maple syrup
1 large egg
1 teaspoon vanilla

Directions:

Preheat oven to 350 degrees. Line a muffin pan with paper liners.

Combine dry ingredients together in a medium bowl. Mix in the apples, raisins, and walnuts.

In another bowl, add the remaining ingredients and whisk together. Add the dry mixture and mix until just combined.

Pour evenly into prepared muffin tin and bake for 22 to 25 minutes, or until tester comes out clean.

Eat within two days. These muffins freeze well.
