Rhubarb muffin with sugar topping |
If you have some fresh rhubarb, here is a quick and delicious rhubarb muffin recipe to bake. The sugar and cinnamon topping make it extra special.
Rhubarb Muffins
Makes 12 large muffins
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup soft butter
1 cup brown sugar
1 egg
1 cup buttermilk
1 teaspoon pure vanilla extract
2 cups fresh rhubarb, peeled and cut into small dice
Topping
1/2 cup brown sugar
1/4 cup all-purpose flour
1/4 cup melted butter
1 teaspoon cinnamon
Directions:
Preheat oven to 350° F. Line a muffin tin with paper muffin liners.
In a medium bowl, combine flour, baking soda, baking powder, and salt. Set aside.
With an electric beater, beat 1/2 cup butter with brown sugar and egg until light and fluffy.
Add the flour mixture, buttermilk, vanilla and rhubarb into the butter mixture and stir until just combined.
Spoon equally into prepared muffin cups.
For topping: In a small bowl, combine brown sugar, flour, melted butter and cinnamon. Mix well and press a spoonful on top of each muffin.
Bake for 25 to 30 minutes until a toothpick inserted in the middle comes out clean.
