This banana bread is different from your typical banana bread because it has coconut and cranberries. It has a nice mixture of sweet from the bananas and tart from the cranberries. It’s a great way to use up old bananas and cranberries that may be lingering in your freezer!

Cranberry Maple Banana Bread

Makes 1 loaf

1/2 cup butter, softened
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
1/3 cup maple syrup
1 3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/3 cup unsweetened medium coconut
1 1/2 cups cup cranberries
2 cups mashed very ripe bananas (about 4 bananas)

Directions:

Prepare a loaf pan.

Preheat oven to 350 degrees F.

In a bowl, beat butter and sugar for about 5 minutes. Add vanilla, eggs, maple syrup and continue to beat well. 

In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and coconut. Add the dry ingredients to the wet mixture and stir in the cranberries and the mashed bananas. Spoon into the loaf pan and bake  55 to 60 minutes until a tester comes out clean.
