Chocolate Zucchini Muffins

These Chocolate Zucchini Muffins have a texture similar to a cake.

In this recipe you can swap semi-sweet chocolate chips for bittersweet chocolate chips, if that’s what you have on hand. The texture is almost like a cake and goes nicely with afternoon tea. However, my hubby likes to eat them for breakfast.

Chocolate Zucchini Muffins


Makes 15


1/2 cup butter, melted
1/2 cup oil
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
1/2 cup buttermilk
2 1/2 all purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Dutch processed cocoa powder
1 teaspoon cinnamon
2 cups zucchini, grated
1/2 cup semi sweet chocolate chips

Preheat oven to 350° F.

Prepare muffin tin with paper muffin cups.

Cream together butter, oil, sugar in a large bowl. Add eggs and beat until light and fluffy. Beat in vanilla and buttermilk. In a separate bowl combine flour, baking powder, baking soda, salt, cocoa and cinnamon. Stir into butter batter. Add zucchini and chocolate chips. Mix well. Pour into muffin tin and bake until done, about 25 minutes.
