Zucchini, Hemp Seed And Walnut Bran Muffin Recipe

I love a good muffin and unfortunately, I eat too many. However, I try to make them as “healthy” as possible, which means using oil instead of butter, using healthy whole grains and adding vegetables or fruit.

In this recipe I added hemp seeds instead of flaxseed. Hemp seed is from the hemp plant, which is a different variety of the cannabis plant. Hemp seed is not marijuana (yes, it’s true). But it is a good source of plant-based protein, containing more protein then flaxseeds. Hemp seeds also have 10 essential amino acids and are supposed to be helpful for heart health.

Zucchini, Hemp seed and Walnut Bran Muffins


A nutritious healthy muffin filled with lots of whole foods. If you can’t buy hemp seeds...it can be left out.


ZUCCHINI, HEMP SEED AND WALNUT BRAN MUFFINS

Makes 12 muffins

2 cups grated zucchini
1/2 cup dates, chopped
1/4 cup shredded coconut
1/2 cup walnuts, chopped
1/4 cup white sugar
1/2 cup brown sugar
1/2 cup buttermilk
1 egg
1 teaspoon vanilla
1/4 cup canola oil
1/4 cup molasses
1 1/2 cups wheat bran
1 cup all purpose flour
2 tablespoons hemp seed
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt

Preheat oven to 350° F.  Line muffin tin with paper muffins cups.  In a large bowl combine zucchini, dates, coconut, walnuts, white sugar, brown sugar, buttermilk, egg, vanilla, oil and molasses.  Stir to incorporate.  

Add wheat bran, flour, hemp seed, baking powder, baking soda, cinnamon and salt.  Stir until just combined.  Spoon into muffin tin.  Bake 20 - 25 minutes, or until tester comes out clean.
