Oat Bran Rhubarb Orange Muffins |
This is a nice recipe for a delightful breakfast muffin. It’s not too sweet and has a nice blend of bran, wheat germ, oats and orange.

Oat Bran Rhubarb Orange Muffins
Makes 10 muffins
2/3 cup brown sugar
1 cup all-purpose flour
1/2 cup wheat bran
1/2 cup large flake rolled oats
1/3 cup wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup vegetable oil, such as canola
1 cup buttermilk
1 egg
1 teaspoon pure vanilla extract
finely grated zest from 1 large orange , about 1 teaspoon
1 1/3 cup rhubarb chopped small
Directions:
Preheat oven to 350 degrees F.
In a bowl combine the brown sugar, flour, wheat bran, oats, wheat germ, baking powder, baking soda and salt.
In a separate bowl, whisk together the oil, buttermilk, egg, vanilla, and orange zest.
Add the wet mixture into the dry ingredients, add the rhubarb and gently mix until combined.
Spoon evenly into a muffin tin lined with paper muffin cups.
Bake for 20 minutes until tester comes out clean.
