Rhubarb and Apple Compote |
Compotes are very easy to make and lovely to serve on ice cream, oatmeal or yogurt. This one has orange juice and is not too much sugar. Of course, you’re welcome to add more sugar if you like it a little sweeter.
Rhubarb and Apple Compote
Makes about 2 cups
1 medium-size orange
1 pound rhubarb (454g), cut into 1-inch pieces
1 large apple, peeled, cored and roughly chopped
1/3 cup sugar
Directions:
Grate zest from the orange and squeeze out the juice (should be about 1/3 cup to 1/2 cup). In a medium saucepan, combine the orange zest and juice, rhubarb, apple and sugar. Cover and bring to a boil, reduce heat and simmer 10 minutes until fruit is soft, stirring occasionally.
Serve on yogurt or vanilla ice cream.
