These treats look like cookies but have the texture of a carrot muffin. They are filled with oats, carrots, cinnamon, and raisins. Best of all, they come together quickly in one bowl!


Carrot Cake Oatmeal Cookies

Makes 24

1 cup butter, softened
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla
2 cups all-purpose flour
2 cups large rolled oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 cup grated carrots (about 2 medium carrots)
1/2 cup dark raisins

Directions: 

Preheat oven to 350 degrees F and line two baking sheets with parchment paper.

In a medium-size bowl cream together the butter and brown sugar, then add the eggs and beat until light and fluffy. Add vanilla. 

Mix in the flour, oats, baking powder and baking soda, salt and cinnamon. Add the carrots and raisins, mixing until all is combined.

Drop the dough in heaping teaspoons onto the prepared cookie sheets.

  Bake 10 to 12 minutes until lightly brown.
