Cheddar Cheese Stilton Biscuits

If you are looking for an easy and tasty biscuit to serve with soup, stew or just to eat as a snack, then you must try these yummy cheddar cheese, stilton biscuits. They are simple to make and won't disappoint!

Cheddar and Stilton Biscuits

This is an old recipe of mine, and has always been a crowd pleaser. It uses stilton cheese, which I would recommend using, if you can find it. I did try a different cheese once, but it was like ordering a chocolate sundae without the chocolate.  

Makes about 9 biscuits

2 ½ cups unbleached all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
½ teaspoon salt
1/2 cup chilled unsalted butter, cut into ½-inch pieces
1 cup (packed) coarsely grated sharp cheddar cheese, chilled
½ cup coarsely crumbled stilton cheese (about 2 ounces), chilled
1 ¼ cup chilled buttermilk
1 large egg

Directions: 

Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.  

Whisk first four ingredients in a large bowl to blend well. Add butter and rub in with fingertips until mixture resembles coarse meal.  

Add both cheeses and rub in with fingertips until cheeses are reduced to small pieces.  

Blend buttermilk and egg in small bowl. Add to flour mixture, stirring just until dough is evenly moistened.

Using about 1/2 cup, form into about nine biscuits. Depending on the size you make, you may get more or less. Drop mounds onto prepared sheets, spacing 2 to 3 inches apart. 
 
Bake biscuits 25-30 minutes until golden brown, remove and serve.
