Fresh Salmon Fillet with Salsa Verde |
Here's a tasty salmon dish to try. It's super simple. While the salmon is cooking, you make the salsa verde in a small food processor. It's that simple!
The salsa verde also makes a nice dip for fresh cut veggies for a snack.
Salmon with Salsa Verde
Serves 4
1 1/2 pounds of fresh salmon fillet
Olive oil
Salt and pepper
For the salsa verde:
3 cups loosely packed fresh Italian or curly parsley
3 green onions, coarsely chopped, white parts only
3 tablespoons lemon juice
2 cloves garlic, peeled
1 1/2 teaspoons anchovy paste
1 tablespoon drained capers
1 tablespoon Dijon mustard
1 teaspoon grated lemon zest
Directions:
Preheat oven to 425 degrees F. Lightly rinse salmon and pat dry with paper towel. Place in a baking dish and brush olive oil on top, and season with salt and pepper.
Place into oven and cook 12 to 14 minutes, until fish flakes.
While the salmon cooks, add the salsa verde ingredients into a small food processor and pulse until it becomes a thick mixture.
Spoon into a small bowl. Pass at the table for serving with the salmon.
