This is a fun cranberry muffin recipe to try. They are perfect to have with your morning breakfast or on a coffee break. The sugar-cinnamon topping creates an intriguing blend of tart and sweet. These cranberry muffins are easy to make and freeze nicely.

Cranberry Muffins with Brown Sugar Cinnamon Topping

Makes 12

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup packed brown sugar
1/2 cup canola oil
1 egg
1 cup buttermilk
1 teaspoon vanilla
1 cup cranberries
For the topping:
1/2 cup packed brown sugar
1 tablespoon melted butter
1/2 teaspoon cinnamon

Directions:

Preheat oven to 350 degrees F.

Prepare a muffin pan, either by greasing or line with paper muffin cups.

In a large bowl, combine the flour, baking soda and salt. In another bowl, combine the brown sugar, oil egg, buttermilk and vanilla. Stir the wet ingredients into the dry mixture along with the cranberries. 

Fill each muffin cup evenly with batter.

Make the topping by combining the brown sugar, butter and cinnamon together. 

Spread a little of the mixture evenly over each muffin. 

Bake for 25 minutes, or until a tester inserted into the middle comes out clean.
