Cranberry Cookies

I love Cranberries. They are tart, sassy and need a whole lot of sweetening. 

I always buy bags of them around Christmas time because, well…I don’t know, maybe because it's cranberry season. 

Now what does one do with bags of Cranberries? Well, bake with them of course!

Cranberry Cookies

 These yummy cranberry cookies are filled with great ingredients: oats, wheat germ, walnuts and flavoured with orange and cinnamon.  You can use fresh or frozen cranberries in these cookies which makes them extra special. 

Cranberry Cookies

Makes 16 cookies

2/3 cup brown sugar
½ cup soft butter
1 egg
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 cup fresh or frozen cranberries, coarsely chopped
1 cup rolled oats
¼ cup wheat germ
½ cup chopped walnuts or pecans
1 teaspoon orange rind, minced fine

Directions:

Preheat oven to 350 degrees F. 

Line a cookie sheet with parchment paper. 

In a big bowl combine flour, baking soda, salt, cinnamon, fresh or frozen cranberries, oats, wheat germ and nuts. 

In a separate bowl beat together butter and sugar until creamy. Add egg and beat some more then add the orange rind. 

Add dry ingredients to butter mixture and combine all. Drop dough onto cookie sheet and cook 10 minutes until bottoms are lightly brown.
