Salmon Chowder

Fresh Salmon


Easy, fast dinner to take advantage of all the fresh fish available in B.C. Serve with a green salad and fresh bread.

Salmon Chowder

Serves 4

1 tablespoon vegetable oil
1 cup chopped red onion
1 clove garlic, minced
2 carrots, diced small
2 celery sticks, diced small
1 ½ pounds small white potatoes, diced
½ teaspoon fennel seeds
1 bay leaf
5 cups chicken stock
½ pound salmon fillet cut into ½” cubes
Salt and Pepper to taste

Heat oil in a large pot over medium-high heat. Add onions and garlic and sauté until soft, about 2 minutes. Add carrot and celery and sauté until soft, about 5 minutes. Add potatoes, fennel, bay leaf and chicken stock. Bring to a boil, lower heat and simmer for 10 minutes. Add salmon, cover with lid and simmer 10 minutes, stirring occasionally. Season with salt and pepper.
