These molasses cookies are fun to chew on. They’re spiced with cinnamon, ground ginger and cardamon, which makes them a cozy cookie for the fall season. But the real treat is munching on the white chocolate chips sprinkled throughout.

Yummy Molasses, Cinnamon and White Chocolate Chip Cookies
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon cardamon
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 large egg
1/3 cup granulated sugar
1/2 cup fancy (light) molasses
1/2 cup packed light brown sugar
1 cup white chocolate chips
Granulated sugar in a small bowl for rolling
Directions:
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
In a bowl, whisk together the flour, baking soda, cinnamon, ground ginger, ground cardamon and salt.
In a stand mixer with a paddle attachment, add the butter, egg, granulated sugar, molasses and brown sugar. Mix on a high speed until smooth and creamy.
Add the flour mixture and white chocolate chips and continue to mix until well-incorporated. The dough will be a bit sticky. If you like, you can place the dough in the fridge for 30 minutes to firm it up.
Roll into 1-inch balls and roll each one in granulated sugar. Place on the baking sheet and lightly flatten them out.
Bake for 11 minutes. Allow to cool completely on a rack.
