These hearty cookies are the perfect choice when you need a sweet treat or a yummy snack. Enjoy with a cup of tea on a cool fall afternoon or for breakfast on-the-go.
Makes 24 cookies
Ingredients:
1 cup butter, softened
1 cup brown sugar, packed
2 eggs
2 tablespoons 1% or 2% milk
1 teaspoon vanilla
1 ¾ cups flour
¼ cup wheat germ
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
2 tablespoons chia seeds
2 cups large oats
½ cup chocolate chips
½ cup chopped walnuts
½ cup shredded flaked, sweetened coconut
½ cup dried cranberries
Directions:
Preheat oven to 350° F.
Line two cookie sheets with parchment paper.
In a large bowl, combine the sugar, butter, and eggs. Cream until smooth. Add the milk and vanilla.
In a separate bowl, combine the flour, wheat germ, baking soda, salt, cinnamon, chia seeds, large oats, chocolate chips, walnuts, coconut, and dried cranberries. Give everything a good stir.
Mix the dry ingredients into the butter mixture. With a large spoon, drop the cookie batter onto the cookie sheets and bake 10-12 minutes, until nicely brown on top.
