Three Bean Salad
This recipe is a fantastic side dish! It's great for barbecues, a picnic or served alongside any lunch or dinner.
Serves 6
1 19 oz can red kidney beans, drained and rinsed
1 14 oz can garbanzo beans, drained and rinsed
1 19 oz can black bean, drained and rinsed
1/3 cup finely chopped red onion
1/4 cup fresh chopped tarragon
1 tablespoon apple cider vinegar
2 teaspoons fresh ginger root, peeled and chopped
1/3 cup olive oil
Salt and pepper to taste
Directions:
Place all ingredients in a bowl and mix well. Marinate for two hours or longer in the refrigerator before serving.
