Asparagus soup |
Fresh local asparagus is always a pleasure. It's great steamed and roasted, but have you tried it in a soup? Here's a recipe to try.
Asparagus Soup
Serves 4
1 tablespoon butter
2 pounds asparagus, end removed, coarsely chopped
1 small onion, chopped
1 large white potato, diced small
1/3 cup parsley, chopped
3 cups chicken broth
1/2 cup 2 % milk
Salt and Pepper to taste
Melt butter in a large saucepan over medium heat. Add onion and sauté 5 minutes.
Add asparagus, potato and garlic. Sauté until all begins to soften about 5 more minutes.
Add parsley and stock. Bring to a boil. Reduce heat and simmer until vegetables are tender about 20 minutes.
Puree soup in batches in a blender until smooth. Return to pot and stir in milk. Season with salt and pepper and serve.
