Couscous salad with garbanzo beans and a hint of cumin |
This healthy and delicious side dish has a hint of cumin that your family will love.
Couscous Salad with Garbanzo Beans
Serves 6
3 cups boiling water
2 cups whole wheat couscous
2 cups garbanzo beans, drained and rinsed
1 tablespoon olive oil
2 cups mushrooms
1/2 teaspoon thyme
1 clove garlic, minced
1 medium red pepper, seeded and chopped
1 cup fresh or frozen peas, cooked
1/2 cup currants
1/2 teaspoon salt
1/2 cup parsley
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
6 tablespoon olive oil
6 tablespoons lemon juice
Place couscous in a medium bowl and pour boiling water over it. Keep covered until all water has been absorbed, about 15 to 20 minutes. Remove cover and fluff with a fork. Add garbanzo beans.
In a large skillet, heat oil over medium high heat. Add mushrooms, thyme, garlic and red pepper. Sauté until just cooked. Add to couscous along with the rest of the ingredients. Stir well and serve.
