Black Bean Quesadillas |
Looking for a fast and easy meal to add to you weekly meal planner? Try these Black Bean Quesadillas. They're simple to make with food that's typically in your pantry and refrigerator. Serve with salsa, sour cream, avocado and cilantro on top.
1 14 fl oz can black beans, drained and rinsed
1 medium tomato, chopped
1 clove garlic, minced
1 jalapeno pepper, seeded and minced
1 red bell pepper, seeded and diced small
1/2 cup fresh cilantro, minced
3 green onions, chopped
1/2 cup salsa
1 cup grated cheddar cheese
1 cup feta cheese, crumbled
Salt and pepper
6 10-inch whole grain tortillas
Sour cream
Avocado, sliced
Extra salas
Extra cilantro, chopped
Combine all ingredients together in a bowl. Season with salt and pepper. Spread evenly over 1/2 of each tortilla. Fold each tortilla in half and grill in a panini machine until cheese melts. About 3-5 minutes each. Serve and pass sour cream, avocado slices, salsa and extra cilantro.

I typically cook these quesadillas in a panini machine. If you don't have one they can easily be cooked in the oven.
Makes 61 14 fl oz can black beans, drained and rinsed

1/2 cup salsa
1 cup grated cheddar cheese
1 cup feta cheese, crumbled
Salt and pepper

If you do not have a panini machine. Preheat oven to 425° F and place on a cookie sheet. Cook until cheese melts, about 8-10 minutes.
