Curry Chicken with Apples and Raisins |
This is a mild curry recipe that your family will love. If you wish to add a little more heat, then feel free to add the optional cayenne pepper. Serve it with rice and a green salad.
Curry Chicken with Apples and Raisins
Serves 4
1 tablespoon vegetable oil
4 small boneless, skinless chicken breasts
1 small onion, chopped
1 clove garlic, minced
2 teaspoons curry powder
1/2 teaspoon cinnamon
1/2 teaspoon cumin
Pinch of cayenne pepper (optional)
1 apple, diced
1/2 cup raisins
1 1/2 cups chicken stock
1 tablespoon butter
Salt and pepper, to taste
Cooked rice
Directions:
Heat oil in a large, heavy skillet over medium-high heat. Add chicken and brown each side for about four minutes per side. Remove chicken from heat and transfer to a plate. Add onions and garlic to the skillet and sauté until soft, about six minutes. Add some chicken stock if dry. Add curry powder, cinnamon, and ground cumin. Stir for one minute. Return chicken to skillet, and add the apple, raisins, butter and chicken stock.
Cover and simmer until chicken is cooked, about 20 to 30 minutes (or until cooked through), turning once. Serve with rice.
