Spiced Pork Loin with Apple Chutney
Spiced Pork Loin

This recipe is a bit more involved then a typical weekly dinner because it has apple chutney. If you don’t have time to make the chutney, you can purchase a chutney, such as mango chutney, from your grocery store.  

The pork is marinated with cumin, cayenne pepper, cinnamon and garlic with goes nicely with the apple chutney.

Spiced Pork Loin With Apple Chutney


Serves 6

Marinade:


3/4 cup olive oil
3 cloves garlic, minced
4 teaspoons cumin
1 teaspoon cayenne pepper
1 tablespoon cinnamon
3 pounds pork tenderloin


Directions: 


Combine oil, garlic, cumin, cayenne pepper, and cinnamon together. Rub over pork loin and refrigerate for at least four hours, or overnight.  

Preheat oven to 400° F
Season pork with salt and pepper.
Roast pork in oven until thermometer inserted into the thickest part registers 145° F, about 20-25 minutes. Remove and let stand for five minutes. Cut into ½-inch slices and serve with apple chutney.


Apple chutney: 


3 cups apples, finely chopped
1 onion, chopped
1 cup brown sugar
1 cup of water
3/4 cup cider vinegar
1/2 cup dried currants
1/2 red bell pepper, chopped
1 tablespoon fresh ginger, peeled and chopped
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon dried crushed red pepper
1/4 teaspoon nutmeg
1/4 teaspoon allspice
Pinch of clove
1 tablespoon butter
salt and pepper, to taste


Directions: 


Combine all ingredients except the butter into a large saucepan. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and simmer until liquid is slightly syrupy, stirring occasionally for about one hour. Add butter and stir to melt. Season with salt and pepper. Cool to room temperature and serve with pork loin.
