General Tso Chicken With Veggies

General Tso Chicken With Veggies
General Tso Chicken With Veggies

General Tso chicken is a popular dish in Chinese food restaurants. I’ve created a healthier version with veggies, of course! Feel free to change up the veggies, add your own veggies or leave them out.

This recipe was an inspiration after I purchased a seasoning kit for General Tso Chicken from a vendor at a local craft fair. After trying it, I thought I could create a tastier version, and this is what I came up. I hope you enjoy it.

General Tso Chicken

Serves 4

1/4 cup corn starch
2 medium size chicken breasts cut into bite-sized pieces

1/4 cup brown sugar
1/4 cup soy sauce
3 tablespoons rice vinegar
1 tablespoon Sriracha
1 tablespoon tomato paste
3 tablespoons chicken stock

2 tablespoon vegetable oil, divided

1 clove garlic, minced
1 medium onion cut in half and sliced thin
2 teaspoons fresh peeled, grated ginger
2 handfuls of green beans, ends removed
2 florets of broccoli, chopped

1 tablespoons sesame seeds, toasted

Cooked brown rice

Toss chicken pieces with 1/4 cup cornstarch in a small bowl and set aside.

In another small bowl, combine brown sugar, soy sauce, rice vinegar, Sriracha, tomato paste, ginger and chicken stock and set aside.

In a medium to large skillet add 1 tablespoon oil and heat to medium high.  Sauté chicken pieces for about 5 minutes, flip and cook another 4-5 minutes or until cooked. Remove chicken and set aside.

Add remaining 1 tablespoon oil to skillet and add garlic and ginger. Sauté 1 minute, then add other veggies and sauté until cooked, 5-8 minutes. Add sauce and chicken pieces and stir. Sprinkle toasted sesame seeds on top and serve with cooked brown rice.
