Easy Teriyaki Cod


Cod is a firm, white fish with large flakes and a mild flavour.  Although cod farming in parts of the world has been decimated by intensive fishing, cod is still caught in the coastal North Pacific ocean. 

This recipe is super easy to make and has great flavour. If you can’t find cod, any white fish will do, but remember to adjust the cooking time. I like to follow the 10-minute rule when cooking fish - cook fish for 10 minutes per inch at 425° F.

Easy Teriyaki Cod

Serve this dish with brown rice and steamed or stir-fry veggies.

Serves 4

1 1/2 pounds of cod fillets
½ cup soy sauce
1/8 cup sherry
1 tablespoon brown sugar
1 clove garlic, minced
1 tablespoon fresh ginger, grated

Directions: 

Preheat oven to 450° F.

Combine soy sauce, sherry, sugar, garlic, and ginger. Place cod in the marinade in a plastic zip-lock bag and marinate for at least one hour in the refrigerator. Remove fish from the bag, discarding the marinade. Place fish in a glass dish and bake for 10 to12 minutes, or until fish flakes. 
Serve with rice and steamed or stir-fry vegetables.
