Banana Rhubarb Loaf

 

This loaf is a good way to use your ripe bananaand fresh local rhubarb. It’s a nice combination of sweet and sour (and not too sweet!).  It also has wheat germ and is flavoured with cinnamon and vanilla. The loaf is good for breakfast, as a snack or as a dessert with ice cream.

This banana bread is different from your typical banana bread because it has coconut and cranberries. It has a nice mixture of sweet from the bananas and tart from the cranberries. It’s a great way to use up old bananas and cranberries that may be lingering in your freezer

Banana Bread with Cranberries, Maple Syrup and Coconut

Cranberry Maple Banana Bread

Makes 1 loaf

1/2 cup butter, softened
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
1/3 cup maple syrup
1 3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/3 cup unsweetened medium coconut
1 1/2 cups cup cranberries
2 cups mashed very ripe bananas (about 4 bananas)

Directions:

Prepare a loaf pan.

Preheat oven to 350 degrees F.

In a bowl, beat butter and sugar for about 5 minutes. Add vanilla, eggs, maple syrup and continue to beat well. 

In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and coconut. Add the dry ingredients to the wet mixture and stir in the cranberries and the mashed bananas. Spoon into the loaf pan and bake  55 to 60 minutes until a tester comes out clean.

I’m a collector (some would say hoarder) of cookbooks and cooking magazines. So, while stranded at home with pulled muscles, I piled them up and spent time perusing new and interesting recipes to make. It’s a fun way to get back into the swing of cooking on a regular basis especially if you’re stuck in a cooking rut.

I love to bake, and since it was blueberry season, I decided to made a few recipes with blueberries. I made this lemon blueberry pound cake recipe a few times and loved it every time.

This pumpkin loaf is unassuming, not too sweet, and subtly delicious. The recipe calls for butter, which makes it luscious. However, if you wish a lower fat version, I’ve substituted oil for butter, and been happy with the results.  

It is great for breakfast or with your afternoon tea.

This is a delightful cake, which can be served with or without cream cheese icing. 

It's moist and flavoured with cinnamon, all-spice and nutmeg. 

I used pumpkin puree, but if you wish, you could buy a sugar pumpkin, remove the seeds, roast it and use the cooked pumpkin inside instead. Sugar pumpkins are usually sold at Farmer’s Markets.
