Spiced Pumpkin Muffins with Raisins
Makes about 12
2 cups all-purpose flour
1/2 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoons ground allspice
1 cup canned pumpkin puree
1/3 cup vegetable oil
1/4 cup fancy or light molasses
1 egg, slightly beaten
1/2 cup buttermilk
1/2 cup dried Thompson Raisins
1/2 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoons ground allspice
1 cup canned pumpkin puree
1/3 cup vegetable oil
1/4 cup fancy or light molasses
1 egg, slightly beaten
1/2 cup buttermilk
1/2 cup dried Thompson Raisins
Directions:
Preheat oven to 350 degrees F.
Line a muffin tray with paper muffin liners.
In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and allspice
In another bowl, combine pumpkin puree, vegetable oil, molasses, egg and buttermilk.
Add wet mixture to dry ingredients and mix until just combined.
Gently fold in the raisins.
Spoon evenly into prepared muffin tin and bake 20 minutes or until tester comes out clean.
