I find preparing fish a simple weekday meal that my family loves. There are many marinades and rubs that work well with fish. This teriyaki option is easy to prepare and only needs to be marinated for 20 to 30 minutes. Serve with rice and lightly steamed veggies.

Teriyaki Salmon

Serves 3 or 4 small portions

1 pound salmon fillet, (you can also use a white fish such as snapper or cod if you prefer)

1/2 cup teriyaki sauce

1/4 cup brown sugar

1 tablespoon fresh lemon juice

1 clove garlic, minced

1 tablespoon fresh ginger, peeled and minced

Directions: 

Combine teriyaki sauce, brown sugar, lemon juice, garlic, and fresh ginger in a small bowl. Place fish in a small bowl or medium resealable plastic bag and pour marinade on top. Let sit for 20 to 30 minutes while you prepare the rice and your side dish.

Heat oven to 425 degrees F.  

Remove the fish from the marinade and discard marinade.

Place the fish on a roasting pan or in an oven-proof dish and bake for 10 to 12 minutes, or until fish flakes with a fork. How long you cook the fish depends on its thickness, typically it’s 10 minutes per inch.
