You are going to love these peanut butter cookies. They are yummy and delightfully light. They are “somewhat” healthy because of the wheat bran and wheat germ. Plus, they are loaded with raisins, nuts, coconut and dates.
Somewhat Healthy Cookies
Makes 24 cookies
1/2 cup butter
1/2 cup peanut butter
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon baking soda
1 cup flour
2 1/2 cups rolled oats
3/4 cup wheat bran
1/4 cup wheat germ
1/2 cup Thompson raisins
1/2 cup pecans, chopped
1/2 cup coconut, shredded
1/2 cup dates, chopped
Directions:
Line a cookie sheet with parchment paper. Preheat oven to 350 degrees F°.
In a large mixing bowl, cream butter, peanut butter and brown sugar. Add eggs and vanilla and beat well.
Combine flour, salt, baking soda and add to egg mixture. Mix until smooth. Stir in remaining ingredients.
Drop spoonfuls onto cookie sheet and press down slightly with a fork. Bake for 12-15 minutes.
