
Rhubarb Apple Crisp

Everyone loves old-fashioned crisp desserts especially in our house where they are a staple. The ones I make are always different because they’re made with whatever seasonal or frozen fruit I have in the house.
This delicious rhubarb apple crisp has a nice blend of sour (rhubarb) and sweet (apple).
Add a splash of whipping cream and you have a yummy dessert.

Rhubarb crisp with Apple

Rhubarb Apple Crisp
3/4 cup packed golden brown sugar
1/2 cup old-fashioned oats
3/4 stick (6 tablespoons) soft butter
1/2 cup chopped walnuts
3/4 pound rhubarb, washed, ends cut off and slice into 1/2 inch pieces
1/3 cup sugar
Whipping cream or ice cream
Preheat oven to 350 degrees F.
In a bowl add flour, brown sugar and oats. Add butter and with fingertips rub into the mixture. It will be clumpy. Mix in walnuts.
Toss together apples, rhubarb and sugar and spoon into an 8 x 8x 2 inch baking dish. Sprinkle oat mixture evenly over the fruit and cook 45 minutes. Serve warm with whipping cream or ice cream.
