Quinoa Greek Salad with Fresh Parsley |
Quinoa is a staple food grown in South America. It’s a grain that is considered a complete protein, and can be used like rice. It is also great as a side dish, in soups, in salads or even in puddings.
This is an easy salad to serve for a weekday meal.
Quinoa Greek Salad
Serves 4
1 cup dry quinoa
2 cups water
3 scallions, chopped
2 tablespoons mint, chopped
2 tablespoons parsley, chopped
1 small cucumber, diced
1 tomato, chopped
½ cup Kalamata olives, pitted and coarsely chopped
¼ cup olive oil
2 tablespoons fresh lemon juice
½ cup feta cheese, crumbled
Salt and pepper to taste
Directions:
Rinse quinoa well under cold water.
Bring 2 cups water to a boil. Add quinoa and cover. Reduce heat and simmer 12 minutes. Remove from heat and let stand 5 minutes. Fluff with a fork.
In a large bowl, combine cooked quinoa with remaining ingredients. Toss to coat evenly. Season with salt and pepper to taste.
