| Easy Greek Chicken with Tzatziki |
Start by marinating the chicken in a simple lemon juice, olive oil, garlic and oregano marinade.
While marinating prepare the Tzatziki. Once chicken is cooked serve with the tzatziki, rice and a Greek salad.

Greek Chicken with Tzatziki
Serves 4
Chicken:
1/4 cup olive oil
2 tablespoon lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1 1/2 boneless, skinless chicken breast
Tzatziki:
1 cup greek style yogurt
1 tablespoon lemon juice
1 medium english cucumber, grated
1/2 teaspoon salt
1 clove garlic, minced
1 tablespoon olive oil
1 teaspoon dried dill (or dried oregano)
Combine olive oil, lemon juice, garlic, oregano and salt together in small bowl. Place chicken in a large Ziploc bag, add marinade. Marinate for 1 hour or longer in the refrigerator.
In a separate bowl, add all ingredients for the Tzatziki. Stir to combine. Leave in refrigerator while chicken cooks.
Preheat oven to 350° F. Remove chicken from marinade and place in a shallow baking dish. Cook 45-50 minutes until cooked through. Serve with tzatziki on top.
Serve with a Greek salad and rice.
