Kale Salad with Strawberries, Fennel, Dried Cranberries and Walnuts
Serves 4
4-6 cups kale, washed, stems removed, and leaves torn into bite-size pieces
1 fennel bulb, core removed and coarsely chopped
2/3 cup toasted walnuts
1 cup fresh strawberries, hulled and sliced
1/3 cup dried cranberries

Dressing:
1 tablespoon white wine vinegar
6 tablespoons olive oil
1 tablespoon maple syrup
Directions:
Wash and prepare kale and place into a salad bowl. Prepare fennel by slicing off the fennel fronds, remove the outside layer if bruised or damaged, slice in half, cut out the core and coarsely chop.
Add fennel, walnuts, strawberries and cranberries to the kale. Season with salt and pepper.
Prepare dressing by whisking together the ingredients. Pour enough salad dressing onto kale to coat, toss.
