Mushroom Orzo Pasta
Mushroom Orzo Pasta - a Fantastic Side Dish


Orzo is a small pasta that cooks fast. This is a fantastic side dish to throw together and goes with many meals.

Mushroom Orzo Pasta

Serves 4

2 tablespoons olive oil
1 medium cooking onion, diced
1 or 2 cloves of garlic, minced
8 ounces mushrooms, sliced (about 5 medium-sized mushrooms)
1 cup orzo 
2 cups chicken or veggie broth
3 tablespoons pine nuts, toasted
1/3 cup fresh Parmesan cheese, grated
Salt and pepper, to taste
2 tablespoon chopped parsley (optional)

 Directions:

Heat olive oil in a medium-large saucepan over medium-high heat. 

Add onions and garlic. Sauté until soft, about 5 minutes. 

Add mushrooms and sauté until cooked, about 4 more minutes. 

Mix in orzo, broth and pine nuts and bring to a boil. Once boiling, cover, reduce heat and simmer for 15 minutes. 

Remove from heat and stir in Parmesan cheese. Season with salt and pepper. Serve and sprinkle parsley on top, if using.
