Pasta Carbonara |
Looking for a super simple dish to throw together that the whole family will enjoy? Try making this pasta carbonara recipe. This dish is a must-make weeknight meal. To save time you could cook up a whole package of bacon the day before, have some for breakfast, and save 8 pieces for dinner. Serve with a green salad and a baguette.
PASTA CARBONARA
Serves 4
1 pound dry spaghetti noodles
8 slices of bacon
1 tablespoon olive oil
1 tablespoon butter
1/2 medium sized red onion, chopped
1 clove garlic, minced
3 eggs
1/2 cup Fresh Parmesan Cheese, Grated
1 cup frozen peas
Salt and pepper to taste
Cut bacon into 1 inch pieces. Heat medium-size skillet over medium high heat. Add bacon and cook until crispy. remove bacon bits, drain off fat. Add oil and butter to skillet. Saute onions and garlic until soft, about 7 minutes. At the same time, cook spaghetti in a pot of boiling salted water until almost done. Add peas and boil until spaghetti is cooked. In a large bowl, beat eggs, add cheese. Drain spaghetti and peas. toss together spaghetti, peas, bacon, eggs and cheese in the big bowl. Season with salt and pepper and serve.
