Mixing coconut with sugar and egg whites is always a good thing in our house. These are super-fast to make and will be gone by the end of the day! These coconut cookies are perfect for serving when friends arrive unexpectedly because they're quick to make.
Coconut Macaroons |
Easy Chewy Coconut Macaroons
Makes about 12 cookies
Pinch of salt
2 tbsp sugar
1/2 tsp vanilla extract
1 1/2 cup sweetened flaked coconut
Directions:
Preheat oven to 350°F. Line a baking sheet with parchment paper. In a stand mixer with the wire whip attachment, whip the egg whites with a pinch of salt until foamy.
Continue beating while slowly adding in the sugar. Beat until smooth and shiny.
Add vanilla and mix until combined, then stir in the coconut. Drop 1 tablespoon of egg white mixture onto baking sheet, spacing the dollops out evenly.
Bake for 12 to 15 minutes.
Carefully peel macaroons off parchment and place on baking rack to cool.
