Gingerbread Cookies
Makes 12 cookies
1/2 cup butter
1/2 cup packed brown sugar
1 egg
1/2 cup molasses
1/4 cup water
2 3/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon ground allspice
1 tablespoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon ground allspice
Directions:
Preheat oven to 350° F.
In a large bowl, cream together the butter and sugar with a mixer. Beat in the egg, molasses, and water. In a separate bowl, combine the flour, baking soda, salt, and spices. Gradually blend into the creamed mixture. If necessary, chill in the fridge until the dough is firm enough to roll.
On a floured surface, roll out dough to 1/8-inch thickness and cut into gingerbread men (or women!) Decorate with smarties and raisins.
Place on a baking sheet lined with parchment paper and bake for 8 to 10 minutes, or just until firm.
