Chocolate Chip Coconut Cookies |
My mother collected recipes. She wrote them on white, lined recipe cards and stored them in a big square plexiglass recipe box. Many of the hand-written recipes had notes on them, along with the name of the friend who'd given it to her scribbled on the top. As well, she had a big recipe binder stuffed with recipes from newspaper and magazine clippings that were pasted onto thick pieces of paper for safekeeping. I found this recipe tucked away in the baking section, and is definitely worth a try.
Chocolate Chip Coconut Cookies
Makes about 18 cookies1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter
1 egg
1 1/2 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup shredded sweetened coconut
Directions:
Preheat oven to 350° F.
Cream both sugars and butter to together. Add egg and beat until smooth. In another small bowl, add flour, baking soda, salt, chocolate and coconut. Beat into the butter mixture, using a spatula to scrape mixture off the sides. Line a cookie sheet with parchment paper and drop cookie mixture from a spoon. Flatten a little and bake for 12 to 14 minutes.
