Cabbage Slaw with Carrots |
This is a colourful slaw recipe with purple cabbage and carrots. It has green grapes and sesame seeds as well. The dressing is not too heavy, which is what I like.
Cabbage Carrot Slaw with Sesame
Serves 6
3 cups shredded purple cabbage
2 medium carrots, grated
4 scallions, chopped
1 medium red pepper, seeded and chopped
1 cup green seedless grapes, sliced
2 tablespoons fresh cilantro, chopped
2 tablespoons sesame seeds, toasted
Salt and pepper, to taste

Dressing:
1/2 cup plain 2% yogurt
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon white wine vinegar
1/2 teaspoon salt

Directions:
In a medium-size bowl, combine the cabbage, carrots, scallions, pepper, grapes, cilantro and sesame seeds together.
In a small bowl, combine the yogurt, mayonnaise, Dijon mustard, honey, white wine vinegar and salt.
Pour enough dressing onto the coleslaw to coat, but you may not need all of it. Toss, season with salt and pepper and serve.
