Pork Loin with Peanut Sauce |
This is a tasty and easy dish to serve for a weekday meal. You will have to marinate the pork in the morning or the night before, but then all you have to do is come home and cook it. Serve with rice, a big green salad, or sautéed veggies.
Pork Loin with Peanut Sauce
2 pounds pork loin
Marinade:
¼ cup soy sauce
Juice from one medium-sized lemon
Orange zest from one small orange
¼ cup orange juice
2 tablespoons rice vinegar
1 tablespoon brown sugar
1 tablespoon fresh ginger, chopped and peeled
1 clove garlic, minced
½ teaspoon chili-garlic paste
2 teaspoons sesame seed oil
Peanut sauce:
½ cup peanut butter
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon brown sugar
1 tablespoon lime juice
½ teaspoon chili garlic sauce
1 clove garlic minced
2-3 tablespoons warm water
Directions:
In a small bowl, whisk together the marinade ingredients. Place pork in a Ziploc bag along with the marinade. Set in a shallow dish and seal bag. Marinate in the refrigerator 1 to 2 hours or longer, turning the bag occasionally.
Preheat oven to 350 degrees F.
Drain and discard marinade. Place pork in a roasting pan for about 50-55 minutes (or 20-25 minutes per pound) until temperature reaches 160 degrees F.
While the pork is cooking, mix the ingredients for peanut sauce into a small bowl.
To serve, thinly slice the cooked pork and serve with the peanut sauce.
Serve with rice and veggies or a green salad. |
