Date Coconut Oatmeal Cookies |
I've made these date coconut cookies a few times, and they never disappoint. They have a lovely caramel cinnamon taste and...are also nice crumpled on top of a bowl of yogurt!
Date Coconut Oatmeal Cookies
Makes about 16 cookies
1/2 cup brown sugar
1/2 cup butter
1 cup all-purpose flour
1 cup large flaked rolled oats
1/2 cup unsweetened coconut
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg
1 teaspoon vanilla
Directions:
Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper. Place brown sugar, butter, and dates in a small saucepan. Place on medium low heat and melt butter, stirring. Once butter is melted, continue stirring and cook until dates are soft. You may want to use the back of the spoon to break up the dates. This should take about 7 minutes.
In another bowl stir together the flour, oats, coconut, baking soda, cinnamon, and salt.
In a small bowl, whisk the egg slightly and then add the vanilla.
Add the date mixture and the egg mixture to the flour mixture and stir until all is combined.
Shape cookie dough into small bite-sized balls and place on the prepared baking sheet. Flatten them slightly with your hands.
Bake 12 to 14 minutes until bottoms are slightly golden.
