Squash Hummus |
This hummus is a kid-friendly dish. The squash adds a nice sweetness. It’s good served traditionally with pita bread, however it can also be served with raw veggies, crackers, cooked veggies, or in a sandwich.
Cut squash and remove seeds before roasting |
Squash Hummus
1 to 2-pound butternut squash
1 teaspoon ground cumin
½ teaspoon ground mustard
½ teaspoon coriander seeds
5 tablespoons olive oil
1 15 fl oz can garbanzo beans, drained and rinsed
1 clove of garlic, peeled
2 tablespoons fresh lemon juice
½ teaspoon salt
½ teaspoon ground black pepper

Directions
Preheat oven to 400 degree F.
Cut the ends off the squash and slice in half. Scoop out seeds. Place face down on a baking sheet lined with parchment paper.
Bake in oven 40-45 minutes or longer, until it’s soft.
When cool, scoop out two cups of flesh. Add squash, spices, olive oil, garbanzo beans, garlic, lemon juice and salt and pepper into a food processor. Process until smooth.
Serve with pita bread and raw veggies.
