Parmesan Spaghetti Squash
Serves 4
1 medium spaghetti squash, about 3 pounds
3 tablespoons butter
Zest from one medium lemon
¾ cup grated Parmesan cheese
Black pepper
Directions:
Preheat oven to 400 degrees.
Cut ends off spaghetti squash and slice in half. Scoop out the seeds.
Place cut side down on a rimmed baking sheet lined with parchment paper and roast until soft, about 30 to 45 minutes.
Remove from oven.
With a fork, scrape out the long strands of flesh into a bowl.
Add the lemon zest, butter, and Parmesan cheese.
Mix until butter melts. Generously grate black pepper on top, stir and serve.
