Barbecue steaks are a typical Sunday night dinner in our household. This week I switched it up by serving a peppercorn sauce to go with the steaks. I grilled some veggies and added a baked potato to complete this colourful and yummy dinner!

Grilled Steak with Green Peppercorn Sauce

Serves 4

4 Rib Eye steaks (or whatever steaks look good at the grocery store)

1 tablespoon butter
1/2 red onion chopped fine, about 1/3 cup
1/2 cup whipping cream
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
2 teaspoons green peppercorns, drained and rinsed
Salt and pepper to taste

Preheat barbecue. Lightly salt and pepper steaks. Cook on barbecue until done, about 5 - 6 minutes per side.

While steaks are cooking melt butter over medium heat in a small saucepan. Add onions and sauté until lightly brown about 5 minutes. Add whipping cream, red wine vinegar, Dijon mustard and green peppercorns. Lower heat and gently simmer. Season with salt and pepper.

Serve steaks with a tablespoon of sauce spooned on top.
