CABBAGE SLAW WITH AN ASIAN TWIST
Serves 6
1 cup carrot, grated
1 apple, grated
2 cups thinly shredded green cabbage
2 cups thinly shredded purple cabbage
4 green onions, thinly sliced
1 jalapeño pepper, seeded and chopped
1 tablespoon fresh ginger, peeled, finely chopped
3 tablespoons rice vinegar
2 tablespoons sugar
1/4 teaspoon chili paste such as Sambal Oelek
2 tablespoons toasted sesame seeds
In a bowl, combine carrot, apple, green and purple cabbage, green onions, jalapeño pepper and ginger. In a small bowl whisk together rice vinegar, sugar and chili paste. Toss the cabbage with the dressing. Season with salt and pepper. Sprinkle toasted sesame seeds on top.
