Kid Friendly Chili Macaroni

Serving a vegetarian meal and a fish dish in one week may be a challenge.  Especially when you want to make a fast dish that everyone (including kids) will eat and when the whole family is on a different schedule.  A fast, easy, kid-friendly meal is often the only answer.  Chili Macaroni is what I came up with.  There is always tomorrow to be vegetarian.



Chili Macaroni

Serves 4
1 tablespoons oil
1 clove garlic, minced
1 small onion, chopped
1 small red pepper, seeded chopped
1 jalapeno pepper, seeded chopped (optional)
1 pound extra lean ground beef
1 14 fl oz can tomato sauce
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon dried oregano
1 19 fl.oz. can red kidney beans, rinsed
2 cups cooked macaroni
2 cups grated cheddar cheese
Salt and pepper to taste

Preheat oven to 350 degrees F.  In a large skillet, heat oil over medium high heat.  Add garlic, onions, peppers and sauté until soft about 5 minutes.  Add ground beef and cook until no longer pink.  Add tomato sauce, spices and kidney beans.  Add cheese and macaroni.  Stir until cheese melts.  Spoon into a large casserole dish and cook covered in oven 20 minutes.
